Ingredients
- 3 ounces brown rice (84 g)
- 3 ounces chicken breast (84 g)
- 2 cloves garlic (10 g)
- 2 ½ fluid ounce yogurt, nonfat (75 ml)
- 1 teaspoon Italian seasoning (2 g)
- 2 tablespoons olive oil (30 ml)
- ½ cucumber
- 8 cherry tomatoes
- ¼ red onion
- 1 teaspoon vinegar (5 ml)
Preparing this recipe
- Cook the rice according to the packaging instructions.
- Cut the chicken fillet into cubes. Press the garlic.
- In a bowl, mix the chicken cubes with 2 tablespoons of yogurt, half of the Italian seasoning, ⅓ of the oil and half of the garlic. Allow this to marinate for a while.
- Cut half of the cucumber into cubes. Halve the cherry tomatoes. Slice the onion into half rings. Mix this in a bowl with vinegar, ⅓ of the oil and the rest of the Italian seasoning.
- Heat the remaining oil in a pan and cook the marinated chicken pieces for about 5 minutes.
- Grate the other half of the cucumber coarsely with a grater and mix it together with the pressed garlic into the yogurt.
- Serve the rice, chicken and cucumber salad in a bowl. Spoon the tzatziki on top. Season with salt and pepper.
