Ingredients
- 3 ounces penne, whole wheat (84 g)
- 4 sun-dried tomatoes
- 1 clove garlic (5 g)
- 6 cherry tomatoes
- 1 tablespoon olive oil (15 ml)
- 3 ounces shrimp (frozen) (84 g)
- 4 ounces spinach (112 g)
- 1 tablespoon cream cheese, reduced fat (15 ml)
- 1 teaspoon Italian seasoning (2 g)
Preparing this recipe
- Cook the penne according to the package instructions.
- Dice the sun-dried tomatoes. Finely chop the garlic. Halve the cherry tomatoes.
- Heat the oil in a pan. Add the shrimp, garlic and sun-dried tomatoes. Cook for 2 minutes. Add the cherry tomatoes and spinach. Cook for 2 minutes until the spinach wilts. Add the cream cheese and Italian seasoning, along with some pepper and salt. Stir well.
- Drain the penne and add it to the pan with the shrimp. Mix everything thoroughly. Serve in a deep plate.
