Ingredients

  • 3 ounces penne, whole wheat (84 g)
  • 4 sun-dried tomatoes
  • 1 clove garlic (5 g)
  • 6 cherry tomatoes
  • 1 tablespoon olive oil (15 ml)
  • 3 ounces shrimp (frozen) (84 g)
  • 4 ounces spinach (112 g)
  • 1 tablespoon cream cheese, reduced fat (15 ml)
  • 1 teaspoon Italian seasoning (2 g)

Preparing this recipe

  1. Cook the penne according to the package instructions.
  2. Dice the sun-dried tomatoes. Finely chop the garlic. Halve the cherry tomatoes.
  3. Heat the oil in a pan. Add the shrimp, garlic and sun-dried tomatoes. Cook for 2 minutes. Add the cherry tomatoes and spinach. Cook for 2 minutes until the spinach wilts. Add the cream cheese and Italian seasoning, along with some pepper and salt. Stir well.
  4. Drain the penne and add it to the pan with the shrimp. Mix everything thoroughly. Serve in a deep plate.
