Ingredients

  • 1 bell pepper
  • 1 teaspoon curry powder (2 g)
  • ½ teaspoon turmeric (1 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 2 cups cauliflower florets (213 g)
  • 6 falafel
  • 1 clove garlic (5 g)
  • 1 ½ tablespoon yogurt, nonfat (23 ml)
  • 1 squeeze lemon juice (5 ml)
  • 1 handful mixed salad (30 g)

Preparing this recipe

  1. Preheat the oven to 390°F (200 °C). Slice the bell pepper into strips.
  2. In a small bowl create a marinade using the curry, turmeric and oil.
  3. Place the cauliflower florets and bell pepper on a baking sheet. Pour the marinade over them and toss together until everything is well-coated. Season with salt and pepper. Roast for 18 minutes in the middle of the preheated oven.
  4. Add the falafel balls to the baking sheet with the vegetables during the last 6 minutes to warm them up.
  5. Meanwhile press the garlic. Then in a bowl make a dressing from the yogurt, lemon juice and garlic.
  6. Place the lettuce in a deep plate and add the roasted vegetables and falafel. Serve the falafel bowl with the garlic dressing.
