Greek meatball salad

Ingredients

  • 3 ounces 96% lean ground beef (84 g)
  • 1 teaspoon oregano, dried (2 g)
  • 1 tablespoon olive oil (15 ml)
  • ¼ red onion
  • 8 cherry tomatoes
  • ½ cucumber
  • 1 bell pepper
  • 1 handful spinach (25 g)
  • 1 teaspoon vinegar (5 ml)
  • ½ teaspoon yellow mustard (3 g)
  • 1 ounce feta cheese, crumbled (28 g)

Preparing this recipe

  1. In a bowl mix the ground beef with half of the oregano, pepper and salt. Mix well and shape into small meatballs using your hands.
  2. Heat half of the oil in a frying pan and brown the meatballs all over in 5 minutes.
  3. In the meantime slice the red onion into half rings. Halve the tomatoes. Dice the cucumber. Cut the bell pepper into strips. Combine these with the spinach in a bowl.
  4. Create a dressing from the remaining oil, the rest of the oregano, vinegar and mustard. Pour the dressing over the vegetables and toss together.
  5. Serve the salad on a plate, sprinkle the feta on top and add the meatballs. Season with pepper and salt as desired and serve with the (toasted) bread.

1. This salad with Greek meatballs is delicious with olives.
2. Flavor the salad with some freshly chopped dill and/or mint.
