Ingredients

  • 3 ounces brown rice (84 g)
  • ½ red onion
  • 1 bell pepper
  • ½ tablespoon olive oil (8 ml)
  • 8 olives
  • 1 teaspoon oregano, dried (2 g)
  • 1 ounce feta cheese, crumbled (28 g)

Preparing this recipe

  1. Cook the rice according to the package instructions.
  2. Slice the red onion into wedges and the bell pepper into strips.
  3. Heat the oil in a frying pan and sauté the onion, bell pepper, olives and oregano for 5-8 minutes until tender.
  4. Scoop the rice into the bell pepper mixture and season the salad with salt and pepper. Sprinkle with the crumbled feta.
