Ingredients
- ½ pound sweet potato (227 g)
- ¼ onion
- 1 clove garlic (5 g)
- ¼ cucumber
- 2 cups broccoli florets (frozen) (142 g)
- 2 teaspoons oregano, dried (4 g)
- 3 fluid ounces yogurt, nonfat (90 ml)
- 3 ounces chicken breast (84 g)
- 1 tablespoon olive oil (15 ml)
- 1 pinch paprika (ground spice) (1 g)
Preparing this recipe
- Cut the sweet potato into small cubes. Chop the onion and press the garlic. Grate the cucumber.
- Put the potato with the broccoli and onion in a bowl and season with half of the oregano.
- Mix the yogurt with the grated cucumber, garlic and a pinch of salt in a small bowl to make the tzatziki sauce.
- Rub the chicken with half of the oil, the rest of the oregano, paprika powder, salt and pepper. Grill the chicken for 6 minutes on each side or until fully cooked through.
- Meanwhile heat the rest of the oil in a frying pan and stir-fry the potato mixture for 10 minutes. Season with salt and black pepper.
- Serve the grilled chicken with the vegetables and the tzatziki sauce on the side.
Tip van FitChef
1. If you want the tzatziki sauce a bit thicker, remove the seeds from the cucumber.
2. Add to taste more oregano if necessary.
