Ingredients

  • 3 ounces quinoa (84 g)
  • 4 ounces chickpeas (112 g)
  • ½ cucumber
  • 1 bell pepper
  • ¼ red onion
  • 5 sun-dried tomatoes
  • 1 ½ tablespoon olive oil (23 ml)
  • ½ teaspoon yellow mustard (3 g)
  • 1 teaspoon honey (7 g)
  • 1 teaspoon Italian seasoning (2 g)
  • 1 teaspoon vinegar (5 ml)
  • 1 handful arugula (30 g)
  • 1 ½ ounce feta cheese, crumbled (42 g)

Preparing this recipe

  1. Prepare the quinoa according to the package instructions.
  2. Rinse the chickpeas with cold water and drain them. Dice the cucumber and bell pepper, slice the onion into half rings and cut the sun-dried tomatoes into pieces.
  3. Make a dressing with the oil, mustard, honey, Italian seasoning and vinegar. Stir well to combine.
  4. Drain the quinoa and rinse it with cold water. Let it drain.
  5. Divide the salad onto a deep plate. Mix in the quinoa, chickpeas, feta and all the chopped ingredients. Pour the dressing over the salad. Season with salt and pepper to taste.
