Ingredients

  • 3 ounces penne, whole wheat (84 g)
  • 8 cherry tomatoes
  • ½ cucumber
  • 1 squeeze lemon juice (5 ml)
  • 2 ½ ounce cottage cheese, 4% milkfat (70 g)
  • 1 handful arugula (30 g)

Preparing this recipe

  1. Prepare the pasta according to the instructions on the package.
  2. Halve the cherry tomatoes and dice the cucumber. 
  3. Mix the lemon juice into the cottage cheese to taste. Season with salt and pepper.
  4. Stir the cottage cheese mixture into the lukewarm pasta first. Then mix in the tomatoes, cucumber and arugula. Season with salt and pepper.

1. Not a fan of arugula? Make this pasta salad with butter lettuce instead.
2. Also, use a fresh lemon. Then, zest some of the lemon peel and mix it together with the lemon juice into the cottage cheese.
