Ingredients
- 3 ounces penne, whole wheat (84 g)
- 8 cherry tomatoes
- ½ cucumber
- 1 squeeze lemon juice (5 ml)
- 2 ½ ounce cottage cheese, 4% milkfat (70 g)
- 1 handful arugula (30 g)
Preparing this recipe
- Prepare the pasta according to the instructions on the package.
- Halve the cherry tomatoes and dice the cucumber.
- Mix the lemon juice into the cottage cheese to taste. Season with salt and pepper.
- Stir the cottage cheese mixture into the lukewarm pasta first. Then mix in the tomatoes, cucumber and arugula. Season with salt and pepper.

1. Not a fan of arugula? Make this pasta salad with butter lettuce instead.
2. Also, use a fresh lemon. Then, zest some of the lemon peel and mix it together with the lemon juice into the cottage cheese.
