Ingredients
- 4 ounces mango chunks (frozen) (112 g)
- 3 ounces penne, whole wheat (84 g)
- 1 bell pepper
- ½ cucumber
- 1 ½ ounce mozzarella, low-moisture part skim (42 g)
- 4 slices roast beef
- 1 handful arugula (30 g)
- 1 ½ tablespoon olive oil (23 ml)
Preparing this recipe
- Let the mango pieces thaw.
- Cook the penne until done according to the package. Then rinse with cold water, let it drain in a colander and add it to a large bowl.
- Dice the bell pepper and cucumber. Cut the mozzarella into pieces. Halve the slices of roast beef. Add this along with the arugula and mango to the bowl with the pasta. Drizzle the salad with oil and season with salt and pepper. Toss together.
- Serve the pasta salad on a plate.
