Quick salad with pita chips

Ingredients

  • 1 pita, whole wheat
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 clove garlic (5 g)
  • ½ cucumber
  • ½ avocado
  • 2 tomatoes
  • ¼ red onion
  • 1 squeeze lemon juice (5 ml)
  • 1 teaspoon oregano, dried (2 g)
  • ½ tablespoon balsamic vinegar (8 ml)

Preparing this recipe

  1. Preheat the oven to 400°F (210 °C).
  2. Cut the pita in half and then into quarters. Brush the pita bread with half of the olive oil and lightly rub the pita with the cut side of the garlic clove. Season with salt and black pepper. Bake the pita bread in the oven in 8 minutes golden brown.
  3. Cut the cucumber, avocado and tomatoes in big pieces. Cut the red onion into rings. Put it together in a bowl and set aside.
  4. Prepare the dressing with the remaining olive oil, lemon juice, oregano and balsamic vinegar. Taste the dressing and adjust to your liking with salt and black pepper.
  5. Toss the dressing through the salad and top with the pita chips.
