Ingredients
- 3 ounces quinoa (84 g)
- 3 ½ ounce sweet potato (98 g)
- 1 tablespoon olive oil (15 ml)
- 2 ounces kale (frozen) (56 g)
- ½ avocado
- 1 squeeze lemon juice (5 ml)
- 1 teaspoon honey (7 g)
- 1 ounce feta cheese, crumbled (28 g)
Preparing this recipe
- Preheat the oven to 400°F (210°C).
- Prepare the quinoa according to the package instructions.
- Cut the sweet potato into small cubes and mix with ⅓ of the oil, salt and pepper. Roast for 20 minutes until tender and golden brown.
- Massage the kale with ⅓ of the oil and a pinch of salt to soften the texture.
- Slice the avocado.
- Mix the remaining oil, lemon juice, honey, salt and pepper for the dressing.
- Divide the quinoa into a bowl, add the kale, sweet potato, avocado and feta. Drizzle with the dressing.
