Ingredients

  • 3 ounces quinoa (84 g)
  • 3 ounces edamame (84 g)
  • ½ cucumber
  • 1 carrot
  • 5 radishes
  • 1 scallion
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 tablespoon soy sauce (15 ml)
  • ½ teaspoon Sriracha sauce (3 ml)
  • 4 slices roast beef

Preparing this recipe

  1. Cook the quinoa according to the instructions on the packaging. Then, drain and let it cool slightly.
  2. Rinse the edamame beans in a colander and let them drain. Halve the cucumber lengthwise and slice it. Slice the carrot into thin strips with a peeler. Slice the radishes thinly and chop the scallion into rings.
  3. In a bowl, mix the cooled quinoa with the vegetables.
  4. Combine the oil, soy sauce and Sriracha in a small bowl. Stir the dressing into the quinoa salad.
  5. Serve the salad with slices of roast beef. Season with pepper to taste.
