Ingredients
- ½ pound sweet potato (227 g)
- 3 ounces corn (84 g)
- 1 apple
- 1 scallion
- 1 ½ tablespoon olive oil (23 ml)
- 1 squeeze lemon juice (5 ml)
- 1 ½ teaspoon honey (10 g)
- 1 handful mixed salad (30 g)
- 2 ounces feta cheese, crumbled (56 g)
- 1 ounce pumpkin seeds (28 g)
Preparing this recipe
- Peel the sweet potato and cut it into cubes. Put the potato cubes in a pot with water and cook until tender in about 10 minutes. Drain and rinse with cold water. Allow to cool slightly.
- Rinse the corn in a colander with cold water and let it drain.
- Wash the apple, cut into quarters, remove the core and cut the apple quarters into cubes. Slice the scallion into rings.
- Make a dressing with the oil, lemon juice and the honey.
- Place the lettuce along with the sweet potato, corn, apple and scallion in a bowl. Sprinkle the cheese over it and top with the pumpkin seeds. Season with salt and pepper.
- Serve the salad with the dressing.
