Ingredients

  • ½ pound sweet potato (227 g)
  • 3 ounces corn (84 g)
  • 1 apple
  • 1 scallion
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 squeeze lemon juice (5 ml)
  • 1 ½ teaspoon honey (10 g)
  • 1 handful mixed salad (30 g)
  • 2 ounces feta cheese, crumbled (56 g)
  • 1 ounce pumpkin seeds (28 g)

Preparing this recipe

  1. Peel the sweet potato and cut it into cubes. Put the potato cubes in a pot with water and cook until tender in about 10 minutes. Drain and rinse with cold water. Allow to cool slightly.
  2. Rinse the corn in a colander with cold water and let it drain.
  3. Wash the apple, cut into quarters, remove the core and cut the apple quarters into cubes. Slice the scallion into rings.
  4. Make a dressing with the oil, lemon juice and the honey.
  5. Place the lettuce along with the sweet potato, corn, apple and scallion in a bowl. Sprinkle the cheese over it and top with the pumpkin seeds. Season with salt and pepper.
  6. Serve the salad with the dressing.
