Ingredients
- ½ pound potato (227 g)
- 1 leek
- ½ onion
- 1 carrot
- 1 tablespoon olive oil (15 ml)
- 3 ounces chicken breast (84 g)
- 1 tablespoon water (15 ml)
Preparing this recipe
- Peel the potatoes and cut them into pieces. Boil the potatoes in water with some salt for 18-20 minutes until tender.
- Slice the leek into thick rings. Cut the onion into wedges and the carrot into slices.
- Heat the oil in a heavy-bottomed pan and brown the chicken breast for 2 minutes. Add the vegetables and sauté briefly. Pour in water and cover, allowing the chicken and vegetables to simmer gently for about 15 minutes. If the mixture gets too dry, add some extra water. Season with salt and pepper.
- Remove the vegetables and chicken from the pan, setting them aside on a plate. Bring the remaining liquid to a boil until it reduces to a flavorful broth.
- Slice the chicken into wide pieces.
- Drain the potatoes and let them steam dry.
- Serve the chicken in a deep bowl with the broth, vegetables and boiled potatoes.

1. Sprinkle the chicken with finely chopped fresh parsley as a garnish.
2. This chicken is delicious with curry and smoked paprika powder.
3. You can also add a squeeze of lemon juice over the chicken.
