Ingredients

  • 3 ounces chicken breast (84 g)
  • ½ onion
  • 1 clove garlic (5 g)
  • ½ chili pepper
  • 1 bell pepper
  • 1 carrot
  • ½ tablespoon olive oil (8 ml)
  • 1 teaspoon ground cumin (2 g)
  • ½ teaspoon turmeric (1 g)
  • 1 tablespoon tomato paste (20 g)
  • 3 ounces brown rice (84 g)
  • 7 ounces diced tomatoes (196 g)
  • 1 cup water (237 ml)

Preparing this recipe

  1. Cut the chicken breast into pieces. Dice the onion. Finely chop the garlic and chili pepper. Cut the bell pepper and carrot into small cubes.
  2. Heat the oil in a large pan over medium heat. Add the chicken pieces and cook for 4 minutes.
  3. Add the onion, bell pepper and carrot and sauté for 5 minutes.
  4. Then add the garlic, chili pepper, cumin and turmeric powder and sauté for 1 minute. Stir in the tomato paste and sauté for another minute.
  5. Add the rice, diced tomatoes and water. Stir well and bring the mixture to a boil. Cover the pan and let it simmer for 15 minutes, stirring regularly. 
  6. Season with salt and pepper to taste and serve immediately.

Add more chili pepper if you like it spicy and garnish with fresh parsley.
