Ingredients
- 3 ounces chicken breast (84 g)
- ½ onion
- 1 clove garlic (5 g)
- ½ chili pepper
- 1 bell pepper
- 1 carrot
- ½ tablespoon olive oil (8 ml)
- 1 teaspoon ground cumin (2 g)
- ½ teaspoon turmeric (1 g)
- 1 tablespoon tomato paste (20 g)
- 3 ounces brown rice (84 g)
- 7 ounces diced tomatoes (196 g)
- 1 cup water (237 ml)
Preparing this recipe
- Cut the chicken breast into pieces. Dice the onion. Finely chop the garlic and chili pepper. Cut the bell pepper and carrot into small cubes.
- Heat the oil in a large pan over medium heat. Add the chicken pieces and cook for 4 minutes.
- Add the onion, bell pepper and carrot and sauté for 5 minutes.
- Then add the garlic, chili pepper, cumin and turmeric powder and sauté for 1 minute. Stir in the tomato paste and sauté for another minute.
- Add the rice, diced tomatoes and water. Stir well and bring the mixture to a boil. Cover the pan and let it simmer for 15 minutes, stirring regularly.
- Season with salt and pepper to taste and serve immediately.
