Ingredients
- 3 ounces black beans (84 g)
- ½ pound sweet potato (227 g)
- 1 ½ tablespoon olive oil (23 ml)
- 1 pinch chili powder (1 g)
- ½ red onion
- 1 bell pepper
- ½ avocado
- 1 squeeze lime juice (5 ml)
- 3 ounces 96% lean ground beef (84 g)
- 1 teaspoon paprika (ground spice) (2 g)
- ½ teaspoon ground cumin (1 g)
- 2 tablespoons salsa (30 ml)
Preparing this recipe
- Preheat the oven to 430°F (220°C).
- Rinse the black beans and let them drain.
- Peel the sweet potato and cut it into thin fries.
- Place the fries on a baking sheet lined with parchment paper, drizzle with half of the oil and season with chili powder, salt and pepper. Toss well. Bake in the preheated oven for about 20 minutes or until they are crispy. Stir halfway through the baking time.
- Meanwhile, cut the onion into rings and the bell pepper into small strips. Add the vegetables to the baking sheet after 10 minutes.
- Mash the avocado flesh in a bowl with a fork. Add the lime juice and season with salt and pepper. Mix everything well together.
- Heat the remaining oil in a pan over medium heat and cook the ground beef, paprika powder and cumin powder for about 5 minutes. Add the black beans and heat briefly.
- Serve the sweet potato fries with black beans and ground beef with the salsa dip and guacamole on the side.
