Ingredients

  • 10 ounces sweet potato (280 g)
  • 1 leek
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon curry powder (2 g)
  • 3 tablespoons milk, 2% reduced fat (45 ml)
  • 1 teaspoon yellow mustard (7 g)
  • 2 ounces feta cheese, crumbled (56 g)

Preparing this recipe

  1. Peel the sweet potatoes and cut them into even cubes. Place in a pan with plenty of water and bring to a boil. Cook for about 15 minutes until done.
  2. Clean the leek and cut it into half rings.
  3. Heat the oil in a pan. Add the leek along with the curry powder and stir-fry for about 7 minutes until done.
  4. Drain the potatoes and mash with the milk into a puree. Stir in the leek and mustard. Season with pepper and salt.
  5. Serve the mash on a plate and sprinkle the feta over it.

Add a handful of arugula to the mash for a peppery flavor.
