Ingredients

  • 3 ounces beef strips (84 g)
  • 3 ounces brown rice (84 g)
  • ¼ red onion
  • 1 clove garlic (5 g)
  • 1 slice ginger
  • 1 bell pepper
  • 1 carrot
  • 1 tablespoon olive oil (15 ml)
  • 4 ounces broccoli florets (frozen) (112 g)
  • ½ tablespoon tomato paste (10 g)
  • ½ tablespoon soy sauce (8 ml)
  • ½ tablespoon vinegar (8 ml)
  • 1 tablespoon honey (20 g)
  • 3 tablespoons water (45 ml)
  • 2 ounces pineapple chunks (frozen) (56 g)

Preparing this recipe

  1. Allow the beef strips to come to room temperature and season with salt and pepper.
  2. Cook the rice according to the package instructions.
  3. Meanwhile, slice the onion into thin rings, press the garlic and grate the ginger. Cut the bell pepper into cubes and the carrot into thin slices.
  4. Heat the oil in a large frying pan over medium heat. Add the beef strips and cook until browned, about 3-4 minutes. Remove the meat from the pan and set it aside.
  5. Add the onion and garlic to the same pan and cook until the onion is translucent. Add the bell pepper, carrot and broccoli and sauté for another 3-4 minutes.
  6. Stir in the ginger, tomato paste, soy sauce, vinegar, honey and water. Mix well and let it simmer for 1-2 minutes. If needed, add a dash more water.
  7. Add the frozen pineapple chunks and cook for another 2 minutes until the sauce thickens slightly and the pineapple is heated through.
  8. Return the beef strips to the pan and mix everything together. Let it simmer for another 1-2 minutes until everything is heated through. Season with salt and pepper if needed.
  9. Serve the sweet and sour beef strips with the vegetables and rice.
