Ingredients

  • 1 zucchini
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 carrot
  • 1 clove garlic (5 g)
  • 1 slice ginger
  • 1 scallion
  • 3 ounces 96% lean ground beef (84 g)
  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon Sriracha sauce (5 ml)

Preparing this recipe

  1. Preheat the oven to 390°F (200 °C).
  2. Cut the zucchini in half lengthwise and scoop out the insides with a spoon. Place the zucchini halves on the baking sheet and brush the zucchini with half of the oil. Bake in the oven for 15 minutes.
  3. Wash the carrot and dice it. Mince the garlic clove. Cut or grate the ginger. Slice the scallion into rings.
  4. Heat the remaining oil in a pan. Add the carrot and cook for 3 minutes. Then add the ground beef along with the ginger and garlic and cook the meat until done in about 4 minutes. Finally, add the soy sauce, Sriracha and scallion and cook for another 2 minutes.
  5. Remove the zucchini boats from the oven, place them on a plate and top them with the meat mixture. Season with pepper to taste.
