Ingredients
- ½ onion
- 1 clove garlic (5 g)
- 1 zucchini
- 1 tablespoon olive oil (15 ml)
- 1 cube vegetable bouillon
- 1 ½ cup water (356 ml)
- ¾ cup garden peas (frozen) (196 g)
- 2 tablespoons yogurt, nonfat (30 ml)
- 2 ounces smoked salmon (56 g)
Preparing this recipe
- Finely chop the onion. Mince the garlic. Wash the zucchini and dice it.
- Heat the oil in a soup pot and sauté the onion and garlic for 2 minutes over medium-high heat. Add the zucchini cubes and sauté for 2 more minutes. Then, add the bouillon cube and water and bring to a boil. Let it simmer for about 7 minutes. Finally, add the garden peas and cook for an additional 3 minutes.
- Remove the pot from the heat, add the yogurt and puree the soup using an immersion blender.
- Slice the smoked salmon into strips.
- Pour the zucchini and pea soup into a large bowl and distribute the salmon strips on top. Season with pepper according to taste.
