Ingredients

  • 3 ounces brown rice (84 g)
  • 2 teaspoons curry powder (4 g)
  • 4 fluid ounces yogurt, nonfat (120 ml)
  • 3 ounces chicken breast (84 g)
  • 2 cups green beans (frozen) (251 g)
  • 1 tablespoon olive oil (15 ml)

Preparing this recipe

  1. Prepare the rice according to the instructions on the packaging.
  2. Mix the curry powder with the yogurt in a small bowl. Add pepper and salt to taste.
  3. Coat the chicken breast all around with half of the yogurt sauce. Put the rest of the yogurt sauce in a bowl and set aside.
  4. Cook the green beans according to the instructions on the packaging until tender.
  5. Heat the oil in a frying pan and cook the chicken breast with the adhering yogurt marinade for 15 minutes until cooked through and brown.
  6. Distribute the chicken with green beans in a deep bowl. Serve with the rice and the rest of the yogurt sauce on the side.
     

Tip van FitChef

1. It's delicious to sprinkle the chicken with some grated coconut. 
2. Try using spices like turmeric or cayenne pepper for added kick.
3. Also delicious with sugar snaps instead of green beans.
