Ingredients
- 3 ounces penne, whole wheat (84 g)
- 1 bell pepper
- 4 ounces chicken breast (112 g)
- 1 teaspoon paprika (ground spice) (2 g)
- 1 tablespoon olive oil (15 ml)
- 7 ounces spinach (196 g)
Preparing this recipe
- Cook the penne in a pot with plenty of boiling water and some salt according to the instructions on the package.
- Cut the bell pepper into pieces.
- Slice the chicken into small strips and season them with paprika powder, salt and freshly ground pepper.
- Heat the oil in a skillet and cook the chicken for 8-10 minutes until nicely browned and cooked through. Set the strips aside.
- Add the spinach and bell pepper to the pan drippings and let the spinach wilt while stirring. Add some pepper and salt to taste.
- Drain the penne and mix it with the spinach mixture and the chicken strips.

1. Add a splash of cooking water from the penne to the spinach mixture before combining everything. The starchy water helps create a light sauce that ties all the ingredients together.
2. For extra flavor, you can sprinkle some fresh basil or a squeeze of lemon juice over the dish just before serving.
