Ingredients

  • 4 ounces shrimp (frozen) (112 g)
  • 3 ounces mango chunks (frozen) (84 g)
  • 3 ounces quinoa (84 g)
  • ¼ onion
  • 1 clove garlic (5 g)
  • 2 squeezes lime juice (10 ml)
  • ½ tablespoon olive oil (8 ml)

Preparing this recipe

  1. Allow the shrimp and mango to come to room temperature.
  2. Prepare the quinoa according to the instructions on the package.
  3. Chop the onion. Press the garlic.
  4. Place the onion and half of the mango in a mixing bowl. Add the quinoa to the mixing bowl and stir well. Season to taste with the lime juice, salt and black pepper. 
  5. In a skillet, heat the olive oil and add the garlic. Cook the garlic for 2 minutes until slightly golden brown. Add the shrimp and cook until they turn pink, about 2-3 minutes. Squeeze lime juice over the top of the shrimp and stir to combine. Season with salt and black pepper to taste.
  6. Serve the shrimp on top of the quinoa and garnish with the rest of the mango.
