Ingredients

  • 1 zucchini
  • 1 bell pepper
  • 7 ounces gnocchi (196 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 tablespoon pesto (15 g)
  • 5 falafel

Preparing this recipe

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchini into rounds and then halve them. Cut the bell pepper into large chunks.  
  3. Place the gnocchi, zucchini and bell pepper in a large baking dish. Drizzle the oil and pesto over the ingredients and toss everything together. Season with salt and pepper to taste.  
  4. Place the baking dish in the oven for 20 minutes. In the last 10 minutes, add the falafel to the dish and bake for another 10 minutes.  
  5. Serve on a plate.
