Ingredients
- ¾ pound sweet potato (341 g)
- 1 parsnip
- 1 egg
- 1 apple
- 3 tablespoons milk, 2% reduced fat (45 ml)
- 1 teaspoon yellow mustard (7 g)
- 1 handful spinach (25 g)
Preparing this recipe
- Bring a large pot of water to a boil.
- Peel the sweet potato and parsnip and cut them into equal-sized cubes. Put them in the pot of water and cook for about 15 minutes until tender.
- Boil the egg in another pot of water for 6-8 minutes. Cool it with cold water, peel the egg and cut it in half.
- Meanwhile, dice the apple.
- Drain the sweet potato and parsnip and mash with the milk to make a puree. Season with mustard, pepper and salt. Stir in the spinach and apple cubes into the mash and serve on a plate. Top with the egg.
