Ingredients

  • 1 salmon fillet
  • 3 ounces brown rice (84 g)
  • 1 clove garlic (5 g)
  • 3 cups broccoli florets (frozen) (213 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 squeeze lemon juice (5 ml)
  • 1 teaspoon yellow mustard (7 g)
  • ½ teaspoon Italian seasoning (1 g)
  • 2 tablespoons yogurt, nonfat (30 ml)

Preparing this recipe

  1. Allow the salmon fillet to thaw briefly.
  2. Season the salmon fillet with salt and pepper.
  3. Cook the rice according to the package instructions.
  4. Mince the garlic. Blanch the broccoli florets 5 minutes.
  5. Heat the oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Place the salmon fillet in the pan, skin-side down and cook for about 4-5 minutes per side until cooked through.
  6. In a small bowl, whisk together the lemon juice, mustard, Italian seasoning and Greek yogurt.
  7. Place the salmon and broccoli on a plate, alongside the rice. Drizzle the sauce over the dish before serving.
