Ingredients

  • 3 ounces mango chunks (frozen) (84 g)
  • 3 ounces orzo (84 g)
  • 1 tablespoon olive oil (15 ml)
  • 2 ounces chickpeas (56 g)
  • 2 ounces black beans (56 g)
  • 1 bell pepper
  • ½ cucumber
  • 1 scallion
  • 1 handful arugula (30 g)
  • 1 ounce feta cheese, crumbled (28 g)
  • ½ teaspoon ground cumin (1 g)
  • 1 squeeze lime juice (5 ml)

Preparing this recipe

  1. Take the mango chunks out of the freezer and let them thaw in a bowl.
  2. Cook the orzo according to the package instructions. Drain, mix with the olive oil and let the orzo cool down a bit.
  3. Rinse the chickpeas and black beans in a colander with cold water and let them drain well. Dice the bell pepper and cucumber and slice the scallion into rings.
  4. Put the orzo in a large bowl along with the bell pepper, cucumber, chickpeas, black beans, mango chunks and arugula. Crumble the feta over the salad. Season the salad with cumin powder, lime juice and some pepper and salt. Toss everything well together.
  5. Serve the salad on a (deep) plate.
