Ingredients

  • 3 ounces edamame (84 g)
  • 3 ounces brown rice (84 g)
  • 4 ounces garden peas (frozen) (112 g)
  • ¼ cucumber
  • ½ avocado
  • 1 tablespoon soy sauce (15 ml)
  • ½ tablespoon vinegar (8 ml)
  • 1 teaspoon maple syrup (7 g)
  • 1 handful spinach (25 g)

Preparing this recipe

  1. Allow the edamame to thaw briefly.
  2. Cook the rice according to the instructions on the packaging. Add the edamame and garden peas to the pot in the last 5 minutes of the rice's cooking time.
  3. Cut the cucumber and avocado into small cubes.
  4. Make the dressing by whisking the soy sauce, vinegar and maple syrup in a small bowl.
  5. In a large bowl, combine the spinach, rice, edamame, garden peas, cucumber and avocado.
  6. Pour the dressing over the salad and mix well. Season with pepper and salt.
