Ingredients
- ½ red onion
- 1 bell pepper
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon ground cumin (2 g)
- 14 ounces diced tomatoes (392 g)
- ¼ cup water (59 ml)
- 1 egg
- 3 ounces cottage cheese, 4% milkfat (84 g)
Preparing this recipe
- Finely chop the onion and slice the bell pepper into strips.
- Heat the oil in a deep frying pan or wok. Sauté the onion for 1 minute. Add the bell pepper and cumin powder and cook for 4 minutes.
- Add the diced tomatoes and the water to the pan and cover it. Let it simmer gently for 10 minutes. Season with salt and pepper to taste.
- Make a small well in the stew. Crack the egg into the well and season it with salt and pepper. Distribute the cottage cheese among them. Cover the pan again and let the egg set over low heat for 8-10 minutes.
