Ingredients
- 7 ounces pumpkin (frozen) (196 g)
- ½ onion
- ½ chili pepper
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon paprika (ground spice) (2 g)
- ½ teaspoon ground cumin (1 g)
- 3 ounces 96% lean ground beef (84 g)
- 1 egg
- 1 scallion
Preparing this recipe
- Thaw the pumpkin pieces for a bit.
- Finely chop the onion and cut the chili pepper into pieces.
- Heat the oil in a pan and sauté the onion and chili pepper for a minute. Then add the pumpkin cubes, paprika powder and cumin powder and cook for about 4 minutes.
- Add the ground beef to the pan and cook for 3 minutes.
- Make a well in the skillet and crack the egg into it. Put the lid on the pan and let it simmer on low heat for 5 minutes until the egg is cooked.
- Meanwhile, cut the scallion into rings.
- Serve the pumpkin skillet on a plate, season with pepper and salt and garnish with the scallion.
