Ingredients

  • 3 ounces quinoa (84 g)
  • ¼ cube vegetable bouillon
  • 8 cherry tomatoes
  • ½ cucumber
  • 1 scallion
  • ½ clove garlic (3 g)
  • 1 ½ ounce feta cheese, crumbled (42 g)
  • 2 ½ fluid ounce yogurt, nonfat (75 ml)
  • 1 squeeze lemon juice (5 ml)
  • 2 tablespoons water (30 ml)
  • 1 teaspoon oregano, dried (2 g)
  • 1 pinch ground cumin (1 g)

Preparing this recipe

  1. Prepare the quinoa with the bouillon cube according to the instructions on the package.
  2. Cut the cherry tomatoes into quarters, dice the cucumber and slice the scallions. Mince the garlic clove.
  3. Put the feta, yogurt, some lemon juice, water, oregano, cumin and the minced garlic together in a blender or the cup of an immersion blender and blend until smooth. If needed, add a dash more water. Season with salt and pepper to taste.
  4. Combine the quinoa, tomatoes, cucumber, scallion and half of the dressing in a bowl and mix well.
  5. Serve the quinoa in a bowl and provide the remaining dressing on the side. Garnish with a slice of lemon.

Requisites:

  • Immersion blender

Tip van FitChef

1. If you don't have an immersion blender, you can also mash the feta with a fork and mix everything together in a bowl for a chunkier dressing.
2. It's delicious to stir fresh parsley or cilantro into the salad.
