Ingredients

  • 3 ounces quinoa (84 g)
  • 3 ounces edamame (84 g)
  • 1 apple
  • 1 scallion
  • ½ cucumber
  • 5 slices bacon
  • 1 handful spinach (25 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 2 squeezes lemon juice (10 ml)

Preparing this recipe

  1. Cook the quinoa until done following the instructions on the package. Then, drain.
  2. Rinse the edamame beans in a colander and let them drain. Dice the apple. Slice the scallion into rings. Dice the cucumber.
  3. In a dry frying pan, fry the bacon slices on both sides until crispy, about 2 minutes per side. Then, cut them into pieces.
  4. Place the spinach in a large bowl and arrange the quinoa, edamame beans, apple, scallion, cucumber and bacon on top.
  5. Drizzle the salad with the oil and lemon juice. Toss everything together and season with pepper and salt to taste.
