Ingredients
- 3 ounces brown rice (84 g)
- 1 carrot
- 1 bell pepper
- ½ red onion
- ½ chili pepper
- 1 tablespoon olive oil (15 ml)
- 1 pinch paprika (ground spice) (1 g)
- 1 squeeze lime juice (5 ml)
- 2 tablespoons cream cheese, reduced fat (30 ml)
Preparing this recipe
- Cook the rice until tender according to the instructions on the packaging.
- Slice the carrot into rounds and the bell pepper into strips. Finely chop the onion and the chili pepper.
- Heat the oil in a skillet and sauté the carrot, bell pepper, onion and paprika over medium heat for 8-10 minutes until cooked. Add the cooked rice, chili pepper and lime juice. Heat the vegetable mixture for 2 minutes while stirring. Season with salt and pepper. Serve the vegetable mixture with the cream cheese.
