Salad with bell pepper & goat cheese

Ingredients

  • 1 bell pepper
  • 10 cherry tomatoes
  • ¼ onion
  • 1 clove garlic (5 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • ½ tablespoon balsamic vinegar (8 ml)
  • 1 handful spinach (25 g)
  • 2 ounces goat cheese (56 g)
  • 2 slices bread, whole wheat

Preparing this recipe

  1. Cut the bell pepper into wide strips. Halve the cherry tomatoes. Finely chop the onion and mince the garlic.
  2. Whisk together a dressing of the oil, vinegar, pepper and salt in a small bowl.
  3. Heat the remaining oil in a frying pan and cook the bell pepper with the onion and garlic over low heat for 3-4 minutes until tender.
  4. Place the spinach in a bowl and mix in the bell pepper. Top the salad with the cherry tomatoes and goat cheese and serve with the (toasted) bread.

2. This meal salad becomes extra colorful with some yellow bell pepper!
3. Don't like goat cheese? Replace it with feta or shredded Parmesan cheese.
