Ingredients

  • 3 ounces brown rice (84 g)
  • 2 ounces black beans (56 g)
  • ½ onion
  • 1 clove garlic (5 g)
  • 1 bell pepper
  • 3 ounces chicken breast (84 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon ground cumin (2 g)
  • 2 tablespoons salsa (30 ml)
  • 1 squeeze lime juice (5 ml)

Preparing this recipe

  1. Cook the rice according to the package's instructions and set aside.
  2. Rinse the beans and let them drain.
  3. Finely chop the onion and garlic and dice the bell pepper. Cut the chicken into strips.
  4. Heat the oil in a large pan over medium heat. Add the chicken and season with cumin powder, salt and pepper to taste. Cook the chicken until golden brown in about 5 minutes. Then add the onion, garlic and bell pepper and cook for another 4-5 minutes.
  5. Add the cooked rice, black beans, salsa and lime juice to the pan. Mix well and heat the mixture for a few more minutes.
