Ingredients
- 3 ounces brown rice (84 g)
- 2 ounces black beans (56 g)
- ½ onion
- 1 clove garlic (5 g)
- 1 bell pepper
- 3 ounces chicken breast (84 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon ground cumin (2 g)
- 2 tablespoons salsa (30 ml)
- 1 squeeze lime juice (5 ml)
Preparing this recipe
- Cook the rice according to the package's instructions and set aside.
- Rinse the beans and let them drain.
- Finely chop the onion and garlic and dice the bell pepper. Cut the chicken into strips.
- Heat the oil in a large pan over medium heat. Add the chicken and season with cumin powder, salt and pepper to taste. Cook the chicken until golden brown in about 5 minutes. Then add the onion, garlic and bell pepper and cook for another 4-5 minutes.
- Add the cooked rice, black beans, salsa and lime juice to the pan. Mix well and heat the mixture for a few more minutes.
