Ingredients
- 1 bell pepper
- ¼ red onion
- 3 ounces cottage cheese, 4% milkfat (84 g)
- ½ teaspoon paprika (ground spice) (1 g)
- 2 slices bread, whole wheat
- 1 handful arugula (30 g)
- 2 slices roast beef
Preparing this recipe
- Cut the bell pepper into very small cubes. Finely chop the onion.
- In a bowl, mix the cottage cheese, paprika powder, bell pepper and onion. Season with salt and pepper.
- Spread the bell pepper mixture on the bread and top one slice with arugula. Loosely place the roast beef on top and cover with the other slice of bread, with the side with the bell pepper salad facing down. Cut the sandwich in half.
