Ingredients
- 1 egg
- 3 tablespoons cottage cheese, 4% milkfat (43 g)
- 1 teaspoon yellow mustard (7 g)
- 3 slices bread, whole wheat
- 1 handful arugula (30 g)
- 1 ounce raisins (28 g)
- 1 tablespoon hummus (20 g)
Preparing this recipe
- Boil the egg for 7 minutes. Cool the egg in cold water, peel it and mash it with a fork in a bowl. Mix the mashed egg with cottage cheese, mustard, pepper and salt.
- Top the first slice of bread with half of the arugula, the egg salad and half of the raisins. Place the next slice of bread on top and spread the remaining arugula, hummus and the rest of the raisins over it. Finish with the final slice of bread.
- Cut the sandwich diagonally and optionally insert a toothpick into the sandwich.
