Ingredients

  • ½ pound sweet potato (227 g)
  • 1 clove garlic (5 g)
  • 1 tomato
  • 1 tablespoon olive oil (15 ml)
  • 3 ounces 96% lean ground beef (84 g)
  • 2 ounces corn (56 g)
  • 2 tablespoons tomato paste (40 g)
  • 1 teaspoon ground cumin (2 g)
  • 1 teaspoon paprika (ground spice) (2 g)
  • ½ avocado
  • 1 squeeze lime juice (5 ml)
  • 2 tablespoons yogurt, nonfat (30 ml)

Preparing this recipe

  1. Poke several holes in the sweet potato with a fork. Place the sweet potato in a microwave-safe dish and microwave on high for 5-7 minutes or until soft. Flip the potato halfway through. Remove the potato from the microwave and let it cool for a moment.
  2. Peel the garlic and chop finely. Cut the tomato into small cubes.
  3. Heat the oil in a frying pan over medium heat. Add the garlic and sauté for 2 minutes.
  4. Add the ground beef and cook until done in 4-5 minutes.
  5. Add the tomato, corn, tomato paste, cumin and paprika powder. Stir and let it cook for another 3 minutes.
  6. Mash the avocado in a bowl. Add lime juice and salt and pepper and mix well.
  7. Cut the sweet potato lengthwise. Scoop out some of the potato with a spoon to create a hollow. Mash this potato crumb and mix it through the ground meat mixture. Spoon the ground beef mixture into the sweet potato.
  8. Serve the stuffed sweet potato with the guacamole and the yogurt as topping.

1. Also tasty with some Sriracha if you like spicy.
2. If you have a bit more time, you can also prepare the stuffed potato in the oven at 350°F for 50 minutes.
