Ingredients
- 7 ounces sweet potato (196 g)
- 8 cherry tomatoes
- 6 olives
- 3 ounces chicken breast (84 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon paprika (ground spice) (2 g)
- 1 handful arugula (30 g)
Preparing this recipe
- Peel the potatoes, cut them into even pieces and boil them until done in 18 minutes. Save the cooking liquid.
- In the meantime, halve the cherry tomatoes and slice the olives.
- Brush the chicken breast with oil, paprika powder and salt and pepper to taste. Heat the (grill) pan and cook the chicken breast until done in 15 minutes.
- Mash the potatoes together with the arugula using a potato masher or fork. Gradually add some of the cooking liquid to taste.
- Finally, stir the cherry tomatoes and olives into the mash and serve with the chicken breast.
