Ingredients

  • 7 ounces sweet potato (196 g)
  • 8 cherry tomatoes
  • 6 olives
  • 3 ounces chicken breast (84 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon paprika (ground spice) (2 g)
  • 1 handful arugula (30 g)

Preparing this recipe

  1. Peel the potatoes, cut them into even pieces and boil them until done in 18 minutes. Save the cooking liquid.
  2. In the meantime, halve the cherry tomatoes and slice the olives.
  3. Brush the chicken breast with oil, paprika powder and salt and pepper to taste. Heat the (grill) pan and cook the chicken breast until done in 15 minutes.
  4. Mash the potatoes together with the arugula using a potato masher or fork. Gradually add some of the cooking liquid to taste.
  5. Finally, stir the cherry tomatoes and olives into the mash and serve with the chicken breast.
