Ingredients
- 8 ounces sweet potato (224 g)
- 7 ounces cauliflower florets (196 g)
- 1 ½ tablespoon olive oil (23 ml)
- 1 teaspoon curry powder (2 g)
- 3 ounces chicken breast (84 g)
- 1 ½ tablespoon cream cheese, reduced fat (23 ml)
- 1 handful arugula (30 g)
- 1 ounce feta cheese, crumbled (28 g)
Preparing this recipe
- Peel the sweet potato and cut it into cubes. Cut the cauliflower florets to be the same size as the sweet potato cubes.
- Bring the potato and cauliflower in a large pot of water to a boil and cook until tender in about 10 minutes.
- Meanwhile, mix the oil with half of the curry powder in a small bowl and coat the chicken breast in this mixture.
- Heat a frying pan and cook the chicken breast until golden brown and cooked through.
- Drain the sweet potato and cauliflower. Add the cream cheese and the other half of the curry powder. Mash this into a coarse puree and mix in the arugula. Season with pepper and salt.
- Serve the mash with the chicken. Sprinkle the feta on top.
