Ingredients

  • 8 ounces sweet potato (224 g)
  • 7 ounces cauliflower florets (196 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 teaspoon curry powder (2 g)
  • 3 ounces chicken breast (84 g)
  • 1 ½ tablespoon cream cheese, reduced fat (23 ml)
  • 1 handful arugula (30 g)
  • 1 ounce feta cheese, crumbled (28 g)

Preparing this recipe

  1. Peel the sweet potato and cut it into cubes. Cut the cauliflower florets to be the same size as the sweet potato cubes.
  2. Bring the potato and cauliflower in a large pot of water to a boil and cook until tender in about 10 minutes.
  3. Meanwhile, mix the oil with half of the curry powder in a small bowl and coat the chicken breast in this mixture.
  4. Heat a frying pan and cook the chicken breast until golden brown and cooked through.
  5. Drain the sweet potato and cauliflower. Add the cream cheese and the other half of the curry powder. Mash this into a coarse puree and mix in the arugula. Season with pepper and salt.
  6. Serve the mash with the chicken. Sprinkle the feta on top.
