Toast with Tomato & Caper Omelet

Ingredients

  • 2 eggs
  • 2 tomatoes
  • ½ tablespoon capers (5 g)
  • 1 tablespoon olive oil (15 ml)
  • 2 slices bread, whole wheat
  • 1 ounce cheddar cheese, shredded (28 g)

Preparing this recipe

  1. Beat the eggs in a bowl with a fork. Dice the tomatoes and stir them into the eggs with the capers. Season with salt and pepper.
  2. Toast the bread.
  3. Heat the oil in a skillet over medium heat. Pour in the egg mixture and cook until the omelet is almost set.
  4. Sprinkle the cheddar over the omelet and cook until melted.
  5. Place the toast on a plate. Fold the omelet in half and place it on top of the toast.

1. Pat the tomato pieces dry before adding them to the eggs to prevent excess moisture.
