Ingredients
- 2 eggs
- 2 tomatoes
- ½ tablespoon capers (5 g)
- 1 tablespoon olive oil (15 ml)
- 2 slices bread, whole wheat
- 1 ounce cheddar cheese, shredded (28 g)
Preparing this recipe
- Beat the eggs in a bowl with a fork. Dice the tomatoes and stir them into the eggs with the capers. Season with salt and pepper.
- Toast the bread.
- Heat the oil in a skillet over medium heat. Pour in the egg mixture and cook until the omelet is almost set.
- Sprinkle the cheddar over the omelet and cook until melted.
- Place the toast on a plate. Fold the omelet in half and place it on top of the toast.

1. Pat the tomato pieces dry before adding them to the eggs to prevent excess moisture.
