Ingredients
- 3 ounces brown rice (84 g)
- 3 ounces tofu (84 g)
- 1 ½ tablespoon soy sauce (23 ml)
- ¼ onion
- 1 clove garlic (5 g)
- 1 tablespoon olive oil (15 ml)
- 1 ¼ cup mixed vegetables, Asian style (207 g)
Preparing this recipe
- Cook the rice according to package instructions.
- Press the tofu to remove excess moisture, then cut it into cubes. In a small bowl, marinate the tofu in soy sauce.
- Slice the onion and mince the garlic.
- Heat the oil in a skillet or wok over medium-high heat. Add the onion and garlic to the skillet and sauté until fragrant. Add the tofu to the skillet and cook for 5 minutes.
- Add the vegetables to the skillet and stir-fry for a few minutes until they are cooked but still crisp. Season with salt and pepper to taste.
- Serve the veggie stir-fry over the cooked brown rice.
