Ingredients

  • 3 ounces brown rice (84 g)
  • 3 ounces tofu (84 g)
  • 1 ½ tablespoon soy sauce (23 ml)
  • ¼ onion
  • 1 clove garlic (5 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 ¼ cup mixed vegetables, Asian style (207 g)

Preparing this recipe

  1. Cook the rice according to package instructions.
  2. Press the tofu to remove excess moisture, then cut it into cubes. In a small bowl, marinate the tofu in soy sauce.
  3. Slice the onion and mince the garlic.
  4. Heat the oil in a skillet or wok over medium-high heat. Add the onion and garlic to the skillet and sauté until fragrant. Add the tofu to the skillet and cook for 5 minutes.
  5. Add the vegetables to the skillet and stir-fry for a few minutes until they are cooked but still crisp. Season with salt and pepper to taste.
  6. Serve the veggie stir-fry over the cooked brown rice.
