Ingredients
- 3 ounces chicken breast (84 g)
- 2 teaspoons Italian seasoning (4 g)
- 1 tablespoon olive oil (15 ml)
- 1 zucchini
- ½ onion
- 8 cherry tomatoes
Preparing this recipe
- Rub the chicken breast with freshly ground pepper and half of the Italian seasoning.
- Heat the oil in a sauté pan and fry the chicken breast over medium-high heat for 12 minutes until browned and cooked through, turning regularly.
- Meanwhile, wash the zucchini and turn it into spaghetti strands using a spiralizer.
- Finely chop the onion. Halve the tomatoes. Remove the chicken breast from the pan and wrap in aluminum foil to keep warm.
- Sauté the onion gently in the drippings from the chicken and stir in the zucchini strands with the rest of the Italian seasoning and some salt and pepper. Warm the zucchini over high heat while stirring. Stir the tomatoes through and warm everything for another minute.
- Serve the chicken breast with the zucchini spaghetti.
