Ingredients

  • 3 ounces shrimp (frozen) (84 g)
  • 3 ounces brown rice (84 g)
  • ¼ cup coconut milk (59 ml)
  • 5 fluid ounces water (150 ml)
  • 8 ounces garden peas (frozen) (224 g)
  • 1 squeeze lime juice (5 ml)
  • 1 clove garlic (5 g)
  • 1 tablespoon olive oil (15 ml)

Preparing this recipe

  1. Allow the shrimp to thaw briefly.
  2. Put the brown rice together with the coconut milk and water in a pot. Bring to a boil and cook until the liquid is almost absorbed, in about 8 minutes. Then add the peas and the lime juice to the rice in the pot and heat for another 2 minutes.
  3. Pat the shrimp dry with kitchen paper. Press the garlic clove. Mix the shrimp with the oil and garlic in a bowl.
  4. Heat a pan and cook the shrimp for 2 minutes until done.
  5. Serve the coconut rice with the shrimp.
