Ingredients
- 3 ounces brown rice (84 g)
- 1 egg
- 1 carrot
- ¼ onion
- 1 clove garlic (5 g)
- 1 scallion
- 2 ½ ounce black beans (70 g)
- 1 tablespoon olive oil (15 ml)
- 2 ½ ounce garden peas (frozen) (70 g)
- 2 tablespoons soy sauce (30 ml)
Preparing this recipe
- Cook the rice according to the instructions on the package.
- Crack the egg into a bowl. Beat the egg with a fork and some salt and pepper.
- Peel the carrot and cut into small cubes. Finely chop the onion and press the garlic clove. Slice the scallion into thin rings. Rinse the black beans in a colander with cold water and let drain.
- Heat half of the oil in a pan. Add the beaten egg and stir-fry until just cooked. Remove the egg from the pan and set aside.
- Heat the other half of the oil and sauté the onion and garlic for a minute. Then add the carrot and cook for about 7 minutes until the carrot softens slightly. Add the peas and cook for another 3 minutes.
- Add the rice and black beans to the pan and stir well. Add the soy sauce and continue stirring and cooking until the rice becomes slightly crispy. Finally, add the egg and scallion rings and heat for another minute.
- Serve the fried rice on a plate.
