Ingredients

  • 3 ounces orzo (84 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 squeeze lemon juice (5 ml)
  • 1 ¾ cup green beans (frozen) (220 g)
  • 1 egg
  • ¼ red onion
  • 1 trout fillet, smoked
  • ½ tablespoon capers (5 g)

Preparing this recipe

  1. Prepare the orzo according to the package instructions. After draining, mix with oil and some lemon juice. Let the orzo cool down.
  2. Add the green beans to a pot of boiling water and cook for about 6 minutes until tender, then rinse with cold water and let them drain.
  3. Meanwhile, boil the egg in a pot of water for 6-8 minutes until cooked. Cool it down with cold water. Peel the egg and cut it into four quarters.
  4. Slice the onion into thin half rings and cut the trout into pieces.
  5. Mix the green beans, red onion, trout and capers through the orzo.
  6. Serve the orzo salad on a plate and place the egg quarters on top. Season with pepper and salt.
