Ingredients
- ½ onion
- 1 clove garlic (5 g)
- 8 cherry tomatoes
- 2 ounces smoked salmon (56 g)
- 1 tablespoon olive oil (15 ml)
- 3 ounces orzo (84 g)
- ½ cube vegetable bouillon
- 1 ¼ cup water (296 ml)
- 6 ounces spinach (168 g)
Preparing this recipe
- Finely chop the onion and mince the garlic. Halve the tomatoes and cut the smoked salmon into strips.
- Heat the oil in a pan. Sauté the onion for 2 minutes, add the garlic and cook for another minute. Add the orzo to the pan along with the bouillon cube and water. Stir well. Bring to a boil and then cook the orzo over medium heat for 10-11 minutes until done, stirring occasionally until all the liquid is absorbed.
- In the last 3 minutes, stir the tomatoes into the orzo along with the spinach, a little at a time, until it wilts. Finally, add the smoked salmon, stir through the orzo and heat for a minute.
- Serve the orzo on a (deep) plate. Season with pepper and salt to taste.
