Ingredients

  • 3 ounces penne, whole wheat (84 g)
  • 1 ½ ounce Parmesan cheese (42 g)
  • 6 cherry tomatoes
  • ¼ red onion
  • ½ clove garlic (3 g)
  • 2 fluid ounces yogurt, nonfat (60 ml)
  • 1 handful arugula (30 g)
  • 5 olives
  • 1 tablespoon olive oil (15 ml)
  • 1 squeeze lemon juice (5 ml)

Preparing this recipe

  1. Cook the pasta according to the instructions on the package. Drain the penne in a colander.
  2. Meanwhile, cut the cheese into ¼-inch cubes and halve the tomatoes. Finely chop the onion. Press the garlic.  
  3. Mix the garlic with yogurt and a little water. Season with salt and pepper.  
  4. Make a salad with the arugula, onion and olives. Toss with the yogurt dressing.  
  5. In a bowl, stir the remaining yogurt and oil with lemon juice, salt and pepper to make a dressing. Mix in the penne, cheese and tomatoes.  
  6. Serve the pasta salad in a deep dish alongside the salad.

Mix finely chopped parsley into the dressing and garnish the pasta salad with some extra parsley.
