Ingredients
- 3 ounces penne, whole wheat (84 g)
- ½ cucumber
- 1 bell pepper
- 6 cherry tomatoes
- 1 ½ ounce mozzarella, low-moisture part skim (42 g)
- 3 slices turkey breast
- 1 handful arugula (30 g)
- 1 ½ tablespoon olive oil (23 ml)
- 1 teaspoon Italian seasoning (2 g)
- ½ tablespoon vinegar (8 ml)
Preparing this recipe
- Cook the penne according to the instructions on the package. Rinse with cold water, let it drain in a colander and add to a large bowl.
- Dice the cucumber and bell pepper. Halve the tomatoes. Cut the mozzarella into pieces. Halve the slices of turkey breast. Add this together with the arugula to the bowl with the penne.
- Mix the oil, Italian seasoning and vinegar in a small bowl. Pour this over the pasta salad. Toss everything together and season with salt and pepper.
- Serve the pasta salad with turkey and mozzarella on a plate.

1. Consider using lemon or lime juice instead of vinegar or add some olives.
