Ingredients

  • 3 ounces quinoa (84 g)
  • 5 ounces chickpeas (140 g)
  • 1 carrot
  • 1 scallion
  • 1 ½ ounce feta cheese, crumbled (42 g)
  • 1 ounce raisins (28 g)
  • 1 handful arugula (30 g)
  • 1 ½ tablespoon olive oil (23 ml)
  • 1 squeeze lemon juice (5 ml)
  • ½ teaspoon yellow mustard (3 g)
  • 1 teaspoon honey (7 g)
  • 1 pinch cinnamon (1 g)

Preparing this recipe

  1. Prepare the quinoa according to the package instructions.
  2. Rinse the chickpeas with cold water and let them drain in a colander. Meanwhile, wash the carrot and grate it.
  3. Slice the scallion into rings. Combine these with the feta, chickpeas, raisins and arugula in a bowl.
  4. Make a dressing from the oil, lemon juice, mustard, honey and cinnamon.
  5. Drain the quinoa, rinse with cold water and let it drain well.
  6. Mix the quinoa and dressing with the rest of the ingredients and combine well. Season to taste with pepper and salt.
  7. Serve the quinoa meal salad with chickpeas in a bowl or deep plate.
